A Menu Full of Local Flavours and Creative Inspiration
In the kitchen, the Le Fangourin team unveils a range of new creations celebrating the richness of the island’s local produce and flavours.
To start, tempt your taste buds with a refreshing duo of smoked marlin and sea bream, freshly marinated fish carpaccio, or mouroum leaf tzatziki. For the main course, pan-seared prawns and the catch of the day sit alongside an appealing selection of vegetarian dishes, including turmeric-infused risotto, a fine tart topped with grilled vegetables, and a vegetable frittata featuring the season’s freshest produce. A tempting selection of dishes sure to delight your taste buds!
Lovers of traditional Mauritian cuisine will also find the timeless classics that have made the restaurant’s reputation: Creole-style sausage rougaille, venison curry from the Rambouillet estate, and the generous Mauritian tasting platter.
And now for something sweet! Indulge in the restaurant’s signature desserts, made with Mauritian unrefined sugars: muscovado tartlet, fresh vanilla crème brûlée, and the much-loved dark chocolate and molasses fondant. Two new treats complete this delicious selection: a lime pavlova and a gourmet coffee dessert selection.
And because the experience continues beyond the plate, the drinks menu has also recently had a makeover! New cocktails featuring Mauritian rum now complement the selection, with refreshing and tropical flavour combinations.

Modern, Generous and Responsible Mauritian Cuisine
Beyond its new menu, Le Fangourin reinterprets traditional flavours while remaining committed to local produce and expertise.
Its 100% Mauritian kitchen team takes great pride in showcasing the island’s rich culinary heritage and supporting local producers. This commitment is also reflected in a tangible environmental approach based on the 5Rs: Refuse, Reduce, Recycle, Reuse and Return to the Earth.
Locally sourced ingredients, with a preference for short supply chains and Made in Moris-certified suppliers; carefully measured portions to minimise food waste; recycling of cooking oil; making use of vegetable peelings, bones and fish trimmings in homemade stocks and sauces; selective waste sorting; a zero-plastic commitment; and the conversion of organic waste into compost using the BiobiN system… Every little action makes a difference!
